Coq au Vin Recipe

The classic French country chicken recipe was generally cooked with an older rooster or a harder to prepare bird, that would benefit from the slow braising, but most modern recipes just use regular chicken portions. It is basically a slow cooked chicken in wine with veggies and a little garnish bag of herbs. You can buy these bags already prepared at specialty food stores, but it is a good excuse to get some cheese cloth and make yourself, as cheesecloth has so many uses around the cabin.

This is a great dish for putting in a regional flare, and for us that means morel mushrooms. If you have some local mushroom specialties, this is a great dish to feature them. If you are near a red wine region, it is a great opportunity to use a local bottle. We have even tried with a cherry wine!

6 boneless chicken thighs

3 chicken breasts

Thick cut bacon

3 Tablespoons olive oil

12 Shallots

3 Garlic cloves, finely chopped

3 Cups small mushrooms, halved

1 Bottle of red wine

Salt and pepper

Chopped fresh parsley

boiled potatoes

Fresh thyme, sage

Bay leaf


2 Tablespoons Butter, softened

All purpose flour


In a large casserole dish, heat oil

Cook shallots 5 minutes

Turn up heat, add chopped bacon

Add garlic and mushrooms, cook 10 minutes

Remove these with slotted spoon to plate

Add chicken parts to oil and brown

Return other ingredients to chicken

Add red wine

Take a piece of cheesecloth and add thyme, parsley, sage and fold into a bag and tie

Add this BOUQUET GARNI to the casserole

Bring to a boil, reduce heat

Simmer 30-40 minutes

Soften 2 Tablespoons butter and mix in 1/4 cup floor in a bowl

Take small spoonfuls of this BEURRE MANIE and add to simmering liquid

Mix in each spoonful and wait to melt and add the next until done

Simmer 5 more minutes

Season with salt and pepper at the end

Garnish with fresh parsley and serve with boiled potatoes
